My Mum's Weetabix Cake


14oz SR Flour                   1lb Brown Sugar               4 Weetabix (or Oatibix)
12oz Dried Fruit                1 Pt Milk                           2 Eggs
(For dried fruit I used sultanas and soft dried apricots which worked well but it is personal choice)

Break Weetabix into crumbs, mix in sugar and dried fruit, add milk.
Mix well and leave covered overnight
Add eggs,  mix well
Add flour, mix well
Divide mixture between two lined and greased 2lb loaf tins
Bake at gas mark 2-3 for 1 – 1and a half hours
